Instructions:
Add a tablespoon of oil to your pan and heat.
Add the green chillies and curry leaves and sauté on medium heat for a minute.
Then add the heaped tablespoon of Big Curry masala.
Sauté for a minute and add the vegetables & the diced potato.
Sauté again for a couple of minutes and add enough water to just cover the vegetables.
Bring to boil and simmer until Vegetables are cooked but crunchy.
Add the coconut milk, stir well and bring to the boil.
Season to your taste, and then turn off the heat when the vegetables are cooked.
Best served with steamed rice.
