The Lord Mayor's Big Curry

A simple quick curry in minutes.

What you will need:
    A can of Coconut milk (400ml)
    4 Fresh Boneless Chicken Thighs or 2 Breasts (Diced into bite size pieces)
    1-2 Tbsp of fresh Coriander (chopped)
    3-4 Curry leaves
    1 Heaped Tablespoon of the Big Curry Masala
    Salt

     

    Instructions:

      Add a Tbsp of Masala to a warm (not hot) pan and allow it to thin down slightly, then add the curry leaves.

      Increase the heat to a medium-high setting and add the Chicken.

      Sauté for around 2 minutes and then pour in the coconut milk.

        Bring it to the boil and then reduce the heat to a simmer for around 5-7 minutes.

        After this time, add the coriander and salt to your taste, turn off the heat with the cover on and let the curry settle for a few minutes before enjoying this with some rice.

         

        NOTE

        You can also use prawns or fish too with this recipe, but these should not be sautéed.

        Instead, cook the curry on its own and bring it to the boil.

        Taste for seasoning, then add the seafood and bring the curry back to the boil.

        Turn off the heat and cover the pot/pan and set aside for few minutes until the seafood is cooked in the residual heat of the curry.

        You can also add some green chillies if you would like a bit of extra punch.

        Slit them lengthways into four or five strips and it to the curry whilst cooking.
